I was at the Farmer's Market today and learned something new (to me) about mushrooms and it sparked my interest so I dug deeper to bring you more information about the wonderful little fungus.Â
In commercial farms the spores are implanted into logs or hardwood sawdust bags/logs where they mature into tree mushrooms. They are grown in a finely controlled environment of around 70 degrees F and over 90% humidity.Â
Because they are not grown in manure you do not have to wash them as well - no dirt. I still rinse mine.Â
Low in calories and fat but rich in nutrients, like B vitamins, antioxidants, minerals, and fiber.
